Bananza Bread

Can you imagine a piece of banana bread that is moist, filling, full of protein, and without being loaded with calories and sugar?  Well… here it is.  Your dream come true.  I’ve removed all of the oil from the original recipe and replaced it with unsweetened apple sauce.  From there, I replaced the sugar with a substitute because the applesauce and bananas act as a natural sweetener.  What you’re left with is a delicious banana bread that’s not too sweet, but is wonderfully moist and satisfies your sweet tooth!

Ingredients

  • 2 1/3 cups whole-wheat pastry flour
  • 1 cup sugar substitute of choice
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 2/3 cup mashed bananas (about 3 medium)
  • 3 eggs
  • 2/3 cup applesauce
  • 1 tsp vanilla extract
  • 2 tsp apple pie/or pumpkin pie spice, (or 1 tsp cinnamon, 1/2 tsp nutmeg)
  • Optional: 1/4 cup mini chocolate chips OR 1/3 cup finely chopped walnuts

Method

1. Preheat oven to 350°.  Lightly spray two 8″x4″ loaf pans with non-stick spray.
2. Sift flour, salt, baking powder, baking soda, and spices together in a bowl.
3. If using, stir in walnuts (adding them to the dry ingredients coats them with flour and helps prevent them from sinking to the bottom of the batter.
4. In a separate bowl, beat eggs, applesauce, vanilla and sugar substitute together.
5. Add sifted ingredients to the creamed mixture, and beat well.
6. Mash bananas and add them to the mixture.  Mix until well combined.

Bake for 45 minutes, or until tester inserted in the center comes out clean.  Cool in pan on rack for 20 minutes. Remove breads from pans and cool completely.

    I just made this and it is delicious! I added chocolate chips instead of walnuts :)

    Was this supposed to make one or two loaves?

    I’m so happy to see a recipe for banana bread that isn’t 400+ calories per slice. People in my office have brough in banana bread that is ridiculously high in calories so this is a great substitute and tastes just as good!

    I love your recipes! I made this today but noticed the recipe didn’t say how much salt to use or when to add the applesauce. I just added a tsp of salt and mixed the applesauce with the bananas. I also used a 1/4 cup of Stevia plus 2 tbsp. Is this the right amount when using Stevia?

    oops. thanks for pointing out the salt mary! i just added it, i hope it wasnt too sweet or salty for ya! i actually only use 1/4 tsp salt :) …. stevia can be tricky, which brand do you use? truvia, nustevia, or plain stevia? anyways, i’m sure you already made it by now, so how did it taste!? :)

    It turned out a little dense but still tasty! I think another problem I had with it was that I couldn’t find pastry flour so I substituted it with whole wheat all-purpose flour. And I was using plain stevia. I definitely want to try it again to make it even better! :)

    yeah mary, the pastry flour is a lot lighter than regular ww. so glad you enjoyed it though! :) did you find that was too much stevia?

    I think it could have used a bit more stevia. And I will definitely try to find some pastry flour for next time!

    Hey Katie! First of all, I just found your blog about a week ago and have already tried 3 of your recipes. They were ALL delicious! I think the favorite was the monkey bread :) Anyways, I am making this recipe right now, and you have applesauce on the ingredient list but forgot to say when you add it. I assumed that you just put it in with the wet ingredients but thought I would point it out incase I am wrong. God bless! -Julie
