Feta Cheese is one of my favorite types of cheese!  It is packed with a rich-salty taste that gives any dish a bold flavor, and it just so happens to be one of the ‘healthier’ types of cheese! Feta is traditionally used in Greek dishes, such as spinach cheese pie, but I love to use it in my salads, wraps, eggs, and just about anything that needs cheese!

I provided various ideas of additional Greek-style toppings to make these burgers as ‘Greek’ as you would like them to be.  For example, you could make a ‘Greek sauce’ by throwing some Greek yogurt, a drizzle of honey, olives, and roasted red pepper together in a food processor and spread it on the bun!

Ingredients:

  • 1 package (1 1/3 pounds) ground chicken or ground turkey breast
  • 1/2 cup crumbled feta cheese
  • 1/2 of a (10 ounce) box frozen chopped spinach, thawed and squeezed dry
  • 1 tbsp fresh oregano (or Italian seasoning)
  • 1/4 tsp garlic powder (or garlic salt)
  • Salt and Pepper to taste
  • 4 light hamburger buns OR 4 Large Pieces of Iceburg lettuce for Lettuce Wraps! (If using buns, look for light buns around 80 calories each, with around 3-5 grams of fiber)

*Optional Toppings: Tomato slices, Pickles, Ketchup, Miracle Whip Light, Mustard, Lettuce, Black Olives, Cucumber Slices, Roasted Red Peppers, Red Onion Rings (cut onion into rings and grill along with burgers)

Method

  1. Preheat grill or broiler. Coat grill or broiler pan with cooking spray.
  2. Wring the defrosted spinach dry by twisting it in a clean kitchen towel (or paper towel) over your sink.
  3. In a medium bowl, mix together ground chicken, oregano, garlic powder, feta, and spinach until well combined; divide mixture into four balls and then press them gently into 4 patties.
  4. Grill or broil patties until burgers are no longer pink inside (or they reach an internal temperature of 165 degrees) about 7 to 8 minutes per side.
  5. Serve each burger on a bun with choice of toppings!

Enjoy!  Love Katie

Thanks for the recipe Katie, I traded the spinach for carrots this time because yesterday was a spinach day. Added some worcestershire sauce. Soooo good. I will be eating these regular. Thanks again for all you do.
