This taco salad is one of my favorite go-to meals when I’m short on time, but still want to make something packed with flavor and is filling! I often use Morning Star meatless crumbles to sub as ground turkey when i’m short on time, which works great because it’s pre-cooked so it’s ready in minutes!

Traditional taco salads are typically served in a ‘Taco Bowl’ which can pack as much as 500 calories and 20 grams of fat just for the ‘bowl’! I re-created the taco bowl in a simple way, that only adds 100 calories, and makes this taco salad fun to eat! (You could also skip this step and serve this salad in a regular bowl as well!)

So, the next time your thinking…”I don’t have much time to make a meal…What should I eat!?!” …Try this Ten Minute Taco Salad! You may be surprised how wonderfully easy it is to make healthy meals that taste this good!

Ingredients:

  • 2 cups shredded lettuce
  • 3/4 cup meatless crumbles, de-thawed according to package directions (or 1/2 cup lean ground beef/ground turkey, fully cooked)
  • 1/4 cup taco sauce
  • 1/4 cup canned corn
  • 1/4 cup salsa
  • 1 tbs light ranch (or sour cream)
  • 1 low carb wrap (such as La Tortilla brand, or something with 100 calories/high in fiber)
  • Optional: 1/4 cup low fat shredded cheese, 1/4 cup black beans

Method:

1. Preheat oven to 450 degrees. Gather ingredients.

2. After removing the corn from the can, (I measure out 1/4 cup for my salad, and save the rest in a tupperware), remove the paper from the can, and place it on a sheet pan. (You could use any empty can you have on hand, or an oven safe mug or dish that you can drape the wrap over).  Drape the wrap over the can, and place in the oven for 8-10 minutes, or until the tortilla is golden brown, and crispy.

3. While the tortilla is baking, add the taco sauce to the meat, and stir until well combined.

4. Measure out, and prepare the rest of the ingredients to put in the salad.

5. When the tortilla is cooled, take it off the can, (it only takes about a minute), and add the lettuce first, followed by the rest of the ingredients.

Serve immediately and Enjoy!!!

    That looks SO good! I love taco salads, but you’re right, if you order them in a restaurant, they’re usually SO unhealthy!

    Thanks Liz! I know.. it’s a shame what that people think they are eating healthy by getting a salad…and in fact it’s just as bad as the burger and fries!

    I love this idea for the taco bowl! I have some leftover taco soup in the fridge — I have a feeling it will make it’s way into a taco bowl tomorrow. ;)

    Found you through Prior Fat Girl. I loooove taco salads and I think my hubby would have so much more fun eating it out of a shell. This is great! I usually use lettuce, tomato, onions, and cilantro in mine but corn is BRILLIANT, I must try! Thanks for an awesome recipe. :)

    I loooovee the morningstar meatless crumbles! My roommate recently became a vegetarian and I finally turn her on to them and she’s obsessed! This salad looks great!
