I love the taste of  marinara and spaghetti sauce! The only problem is, most ‘foods’ that use a delicious red sauce are heavy pasta dishes. I decided to change that recently, when I made my favorite ‘turkey meat sauce’, by stuffing it in a red pepper, which I had a feeling would pair well with the tomatoes in the sauce.

These stuffed red peppers turned out even better than I had imagined~ and they ended up being my lunch for the next three days in a row! I couldn’t get enough of this filling and satisfying dish, and I was thrilled at how easy it was to prepare, (not to mention I had lunch ready for the next three days!) I hope you and your family enjoy these easy and delicious Italian-Style Stuffed Red Peppers as much as I do!

Ingredients

  • 1 lb lean ground turkey (Or lean ground beef)
  • 3 red bell peppers
  • 2 cups spaghetti sauce
  • 1 tsp basil/oregano seasoning (or any blend of italian herbs)
  • 1tsp garlic powder (or 1 garlic clove, pressed)
  • 1/2 tsp salt/pepper
  • 1/2 cup frozen chopped spinach (or veggie of choice),(de-thawed and squeezed dry with paper towel)
  • 2 tbs grated parmesan cheese + 6 tbs to garnish over the top of each pepper
  • Optional: 1 tsp (or 1 packet) low calorie sweetener of choice to put in the sauce~ (I like my sauce slightly sweet!)

Method

1. Pre-heat oven to 450 degrees. Line baking sheet with foil, (for easy clean up), coat with non-stick cooking spray. Wash red peppers, and cut around the stem to remove.

2. Remove the stems.

3. Cut peppers in half length-wise, and remove the seeds and ribs inside the peppers. Set peppers on baking pan.

4. Meanwhile, cook ground turkey in a large non-stick pan over medium-high heat. Stir and break up the turkey while it’s cooking. When turkey is almost completely cooked through, add the sauce and seasonings to the pan. Stir and continue to cook until the turkey is completely cooked (when it is no longer pink).  Add the spinach and parmesan and stir until everything is well combined.

5. Scoop 1/2 cup of the turkey mixture into each pepper.

6. Sprinkle 1 tbs parmesan over each pepper (or another low fat shredded cheese, such as mozzarella).

7. Bake for 20-30 minutes, or until cheese is melted, and lightly golden brown.

8. Remove from the oven, let cool, and enjoy!!!

Note: Peppers stay good in a Tupperware container in the fridge for up to one week! (They freeze well too~ which makes for a great quick and healthy meal!)

    mmm! stuffed peppers! reminds me of when I was a little girl, my mother used to make those on special occasions! Yours look delish- Im gonna have to give these a try!
    and I like my sauce slightly sweet too :)

    ha! I am working on a post about stuffed peppers I just made! I love how you added spinach, I’ll do that next time. I use a can of diced tomatoes in mine!

    I am so happy I found your website. I made these peppers for supper last night and they were amazing! I didn’t have ground turkey, so I used meatless Boca crumbles and my husband couldn’t even tell. We were both very thrilled with this meal. Can’t wait to eat my leftovers at lunch!!

    Thanks so much for posting this recipe! My hubby doesn’t eat any type of vegetable (I cut him some slack–he tries sometimes but just can’t stomach it [I blame his upbringing]), and the fact that these are stuffed with spaghetti sauce makes it super easy for me to just cook up some noodles for him and make the stuffed pepper version for myself! Not only that, but I get to hog all the leftovers. I’ll see what the kids choose to eat. :)

    I could have sworrrrnnn id commented on these when i first saw them, obviously getting old before my time! Anyway, these look absolutely gorgeous and im a massive stuffed pepper fan so it would be nice to follow a recipe in the knowledge the end result is yummy AND healthy! These are on the list to make already and hopefully will be making an appearance very soon, wonderful as always! :)

    I made these a couple weeks ago when we were house sitting for my parents & they were delicious. My husband loved them! He even asked for me to use the meat sauce recipe the next time I make regular pasta. I left two in the fridge for my parents and they ate them the night they got home and both loved them!     Made these tonight and they were delicious. Even my dad liked them, and he doesn’t like anything without beef or lots of butter. I couldn’t believe how filling they were though; none of us could eat more than one half-pepper. How would you recommend re-heating them?

    This recipe looks delicious just like every other recipe I have tried of yours! You do such an amazing job and I have recommended your website to many people.

    I had one question about the serving size. I noticed that the recipe makes 6 stuffed pepper halves and the serving says 1 stuffed pepper has 170 calories. Does that mean 1 pepper half has 170 calories or one whole pepper has 170 calories? Your picture has 2 halves so I was hoping that was the serving size but not sure.

    1/2 of a pepper is 170…that means 2 pepper halves are 340…a perfect amount of VERY FILLING calories for a meal! :)

    These look amazing and my husband loves stuffed peppers – he probably wouldn’t even notice that they are good for you!     Just made these and they turned out so great, and so pretty too! I couldn’t believe how quick and easy this was to make, and how filling it was- had a bowl of soup and just one 1/2 pepper and I was stuffed! Didn’t have any spinach on hand so I used broccoli and lettuce instead, and added some extra spices to the meat sauce mixture.
    All in all, a wonderful nutritious recipe, definitely a keeper :)
