On the 8th Day of Christmas my True Love Gave to Me…

Flour-less Chocolate Cookies that are Soft and Chewy on the Inside and Crispy on the Outside… Chewy Chocolate Peppermint Cookies!

Ingredients:

  • 1 1/2 cup powdered sugar OR for sugar free option, use Ideal brand powdered sugar (*see note below)
  • 1/2 cup cocoa powder
  • 1/2 tsp baking powder
  • 2 egg whites
  • 1/8 tsp salt
  • 1 tbs skim milk
  • 1/8 cup Andes peppermint crunch baking chips

(*Ideal is a naturally sweetened powdered sugar with zero  grams of sugar! I found this in the baking aisle at my grocery store!)

Method:

  1. Preheat oven to 350 degrees. Line baking sheet with parchment paper, or foil sprayed with non-stick cooking spray.
  2. Mix together powdered sugar, cocoa powder, salt and baking powder in a bowl. Place egg whites and milk in another small bowl, and stir to combine. Mix wet and dry ingredients together, until just combined, but don’t over beat.
  3. Using a tablespoon, scoop up cookie batter, and use a teaspoon to drop cookie batter onto prepared baking sheet. Sprinkle peppermint chips on cookies, dividing evenly between cookies.
  4. Bake cookies for 15 minutes, and enjoy!

    These look like the chocolate chewy cookies at Great American Cookies! I can not wait to make them for Santa! (: I hope to find Ideal sweetener!

    I’m a little confused by the way you describe putting them on the baking sheet. Is each cookie teaspoon sized? Or are you just using the teaspoon to scoop the batter out of the tablespoon? Also, do you know approximately how many cookies this makes?

    Yumm! If someone is using the sugar free option, I am sure these would only be 1 pp per cookie. I will have to try and find some to calculate! Looks delish!

    shannon, yep, just scoop the batter with a tablespoon, and use a teaspoon to help scoop it out of the tablespoon! :)

    These are amazing – I just made a batch and my husband ate four cookies right off the bat! Thanks for sharing, I really appreciate all of your flourless recipes since I can’t tolerate the fructan in wheat.
